A Festival in Our Backyard
Big Sky Food & Wine debuted September 24-26, just a short walk from our Big Sky store. The inaugural festival drew more than 40 Michelin-starred and James Beard Award-winning chefs, master sommeliers, and beverage experts to the Big Sky Events Arena, along with cooks from across the Mountain West. About 650 guests a day moved through grand tastings, live-fire cooking, demos, live music, and chef-led dinners.
José Andrés, the chef behind World Central Kitchen, made a surprise appearance, and Culinary Hall of Fame inductee and longtime friend of New West Ming Tsai served as the festival’s Host Chef. At the weekend’s conclusion, organizers sent roughly 300 pounds of leftover ingredients to the Big Sky Community Food Bank, with more bound for the Gallatin Valley Food Bank.
“All the chefs came to not only play, but they came to actually cook,” said Ming.
Our home base was a log cabin-style booth filled with our chef and outdoor knives, and it stayed full all weekend. Guests, chefs, and event crew stopped in to pick up a knife and chop it up with us.
Meet Chef Ming Tsai
Ming Tsai is the foremost interpreter of East-West cooking, and this year he was the festival’s first host chef, bringing guest chefs to the demo stage. “It was, for me, incredibly special,” he said.
For Ming, the best meals are about who’s gathered around them. He believes “the best way to dine is everyone’s at the table.” Ming’s love of family-style dining shows in his tradition of tableside carving; the holiday roast comes out whole so everyone gets the piece they like. That welcome extended to the festival, when he hosted roughly 60 visiting chefs, sous chefs and partners at his home. “I was so honored to have almost all the chefs over to my house,” he said.
Chef Ming’s passion for cooking dates back to age 10, when he made fried rice for visitors at his family’s home in Dayton, Ohio. They took a bite and smiled. “I can make people happy through something that I can do and actually like doing,” he said. “And it’s to this day the reason I’m a chef.”
Ming has continued to impress since that initial meal. He won an Emmy in 1998 for Food Network’s East Meets West, hosts PBS’s longest-running cooking show, Simply Ming, and became Iron Chef Tsai on Netflix in 2022. The James Beard Foundation named his Blue Ginger one of 1998’s best new restaurants and named him Best Chef Northeast in 2002. Today he’s chef and partner at Baba in the Yellowstone Club.
For Ming, community matters beyond the culinary world. After his wife, Polly, was diagnosed with lung cancer in 2017, he founded MingsBings, a plant-based line of Bings, aiming to create health-conscious “food as medicine. He has also raised millions in partnership with the Hawai’i Food and Wine Festival to support local culinary and agricultural education programs, scholarships, and student training across the islands.

A Knife for Life
A Knife for Life
Ming’s first New West knife came from our Jackson Hole store more than a decade ago. While he lived on the East Coast, his one regret was not returning to Jackson enough for free lifetime sharpening. He has since moved to Big Sky. “Oh, my God. There’s a New West store,” he said. “I was very happy.”
Chef Ming judges a knife like a plate. “You eat with your eyes first,” he said, but looks mean nothing without performance: full-tang construction, a perfectly finished handle, and an edge that holds. “These knives are for life.”
At the festival, New West Founder Corey Milligan and our team gave around 40 G10 and Ironwood chef knives to participating chefs, including Bozeman’s Eduardo Garcia of Montana Mex and Big Sky Kitchen. A few went home in sheaths worn around the grounds. Ming noticed. “That became, for lack of a better term, the quiet hit,” he said. “People were talking about, did you try the foie gras? Did you try the truffle? Have you seen the knives?”
See You Next September
Big Sky Food & Wine returns September 23–25, 2027, and so will we. A big thanks to all the participants, organizers, and friends who helped cook up this special event.
